Cold Greek Salad
Serves 4 – 6

  • 3 cups shredded green cabbage
  • 1 green bell pepper, julienned
  • 1 cup English cucumber, julienned, peel on
  • 3 medium tomatoes, wedged
  • 1 cup sliced mushrooms
  • ½ cup sliced black olives
  • 1/3 cup crumbled feta cheese or freshly grated pecorino cheese
  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 to 3 cloves of garlic, minced
  • Sea salt and black pepper (or cayenne pepper) to taste

Toss all ingredients together in a beautiful large serving bowl and enjoy!

Note: You may use romaine lettuce in place of cabbage, but it will have to be eaten immediately, as it will not store well. Also, this can be a main dish with the addition of hormone-free diced cooked chicken breast or turkey, or a 6-ounce can of drained, flaked tuna.

Remember! Buy organic when you can and wash all of your veggies!  I use vegetable wash to wash away pesticides.
