Serves 4 – 6
- 3 cups shredded green cabbage
- 1 green bell pepper, julienned
- 1 cup English cucumber, julienned, peel on
- 3 medium tomatoes, wedged
- 1 cup sliced mushrooms
- ½ cup sliced black olives
- 1/3 cup crumbled feta cheese or freshly grated pecorino cheese
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- 2 to 3 cloves of garlic, minced
- Sea salt and black pepper (or cayenne pepper) to taste
Toss all ingredients together in a beautiful large serving bowl and enjoy!
Note: You may use romaine lettuce in place of cabbage, but it will have to be eaten immediately, as it will not store well. Also, this can be a main dish with the addition of hormone-free diced cooked chicken breast or turkey, or a 6-ounce can of drained, flaked tuna. |
